Back to Bliss-Seeking; My Vegan Thanksgiving Feast

Man it's been a long time since I blogged! Life got a little busy there for a while. And to tell you the truth, I haven't been cooking as much lately. But I have made a few fun things here and there. And I want to get back to it! So, I better share some of my latest creations so I can get caught up.

I'll start with Thanksgiving! It was my first as a vegan and I didn't want to feel like I was missing out on the biggest eating holiday of the year. So, I volunteered to bring several dishes to our family dinner, so that I would have plenty of yummy stuff to fill my plate.

I ended up making a green bean casserole, stuffing, salad and two pumpkin pies with vegan whipped cream. It all turned out really well! The casserole was my favorite, followed by the pies. I think I could done a better job with the stuffing if I made it entirely from scratch, so I'll definitely try that next time.

Unfortunately, I didn't write down any of the recipes, but I started with this one for the green bean casserole: http://www.cestlavegan.com/2009/11/green-bean-casserole/ I think I stuck pretty close to it. It seemed like too much sauce for the amount of green beans I had, so I reserved some, diluted it with almond milk and it made a delicious mushroom soup! Here are some pics:
